Onion is undoubtedly a very simple vegetable, found easily almost in everyone's home. But the fact is that without it, the taste of many vegetables becomes less effective and that is probably the reason why onions are added to most of the vegetables. Of course, there is always a great demand for onions in every corner of the country, but despite this, a very weird problem related to onions always persists, that is, while cutting it tears start coming out of the eyes. But have you ever wondered why this usually happens while cutting onions?
Actually, onion contains an enzyme named "Lachrymatory factor synthase" which is released into the air as soon as the onion is cut. Then this enzyme converts the amino acids sulfoxides of the onion into sulfenic acid and later this sulfenic acid rearranges itself to form syn-Propanethial-S-oxide. As a result, this syn-Propanethial-S-oxide comes in contact with air and enters into our eyes, resulting in the irritation of the lacrimal glands located within the orbit above the lateral end of the eye, causing the tears to start flowing.

Although in earlier times scientists believed some other reason behind this, they believed that due to the enzyme called "Alliinase" found in onion, tears come in the eyes, and for a long time this was believed to be the reason. But when the research was done to know its real reason, the truth turned out to be something else.
